White Bean Summer Sauté

Have y’all ever just craved something and you’re not sure why? For the past couple of weeks I had been wanting some white beans... I honestly couldn’t tell you the last time I cooked or even ate white beans, so it was definitely a weird thing to be craving.


Well to the Internet I went to find a nice summer white bean recipe and to my surprise there was nothing that really satisfied what I was looking for! So to my test kitchen I went and just hoped and prayed that whatever I came up with was good, and let me tell you it was! Check out the recipe below and let me know what you think!

Ingredients

  • 2 cloves of garlic, minced

  • 1 bunch of kale, chopped

  • 1/2 container cherry tomatoes

  • 1 can (15 oz) white beans (Cannellini)

  • olive oil

  • salt, pepper, crushed red pepper flakes to taste


Directions

  1. In a medium sauce pan over medium heat add the olive oil ace garlic. Sauté until fragrant.

  2. Add the sliced cherry tomatoes and let them cook until they blister and some begin to burst.

  3. Add the kale and let it cook until wilted, but too much.

  4. Drain most of the liquid from the beans. Add to the pan and heat through, about 10 min. While cooking season with salt, pepper, and crushed red pepper flakes to taste.

Serve up with some toasted sourdough bread and voila! A quick 15 minute summertime meal. Hope you enjoy!
