Treat yo self! Chocolate Chip Almond Butter Cookies

What's a girl to do on a rainy NOLA day...? Bake of course!! I have been craving something sweet for quite some time now and have fought the cravings until today when I was cooped up inside with this dreary weather.  I had been wanting to make a cookie similar to a peanut butter cookie and while this isn't quite the same consistency the flavors are there because of the almond butter.

Chocolate Chip Almond Butter Cookies

1 large egg

1 cup almond butter, room temperature

1/2 cup coconut palm sugar

1 teaspoon baking soda

3/4 cup chocolate chips, (I use Enjoy Life!)

  • Preheat oven to 350 degrees

  • In a medium bowl whisk the egg until well beaten.

  • Mix in the almond butter until well combined.

  • Add the coconut sugar and baking soda. Mix well.

  • Fold in the chocolate chips.

  • Roll about 1 teaspoon of dough into a ball. Press flat between your hands.

  • Place cookie rounds on parchment paper lined baking sheet, approximately 1/2 inch apart

  • Bake for 9-11 minutes.

  • Allow to cool on baking sheet before removing to a wire rack to cool completely.
