Strawberry Lemon Bread

Nothing says summertime quite like some fresh strawberries! The sweet, juicy berry is probably one of my favorite fruits and at their peak freshness, they are unmatched! While there are so many delicious ways to enjoy them, one of my favorite newest ways is in this strawberry lemon bread. Thanks to the grain-free bread mix from Purely Elizabeth this bread comes together so quickly.


Ingredients

Lemon glaze

  • 1/2 cup confectioners' sugar

  • 1 tablespoons milk, plus more to thin

  • 1/2 tablespoon freshly squeezed lemon juice (or 1 teaspoon lemon extract)


Directions

Directions modified from the back of the bread mix -

  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease an 8"x4" loaf pan or line with parchment paper.

  2. Whisk wet ingredients and the lemon zest together until well combined. Add a full pouch of dry mix and mix until incorporated.

  3. Fold in the strawberries.

  4. Pour batter into the prepared pan and smooth the top.

  5. Bake for 35-40 minutes, or until edges begin to brown and pull away from the pan and a toothpick inserted into the center comes out clean.

  6. While the bread is cooling mix together the glaze ingredients.

  7. Drizzle over top, slice, and enjoy!
