Pumpkin Chia Seed Pudding

This is the perfect, overnight easy breakfast for those on the go fall mornings! And the best part about it, the chia seeds pack a punch with so many benefits that this on the go breakfast is also really great for your body.


Did you know that chia seeds:

  • can help reduce inflammation

  • are rich in antioxidants

  • can help in weight loss

  • can improve digestion

These little seeds seriously are the best! Not only are they packed with goodness, but they are also so versatile and can be used in a variety of ways in recipes. Playing around with different flavor combinations and toppings is a fun way to switch up breakfast. So check out this fall rendition of my chia seed pudding. I hope you enjoy it!

 

Servings: 1


Ingredients:

  • 1/2 cup milk of choice ( I use this)

  • 2 tbsp pumpkin puree

  • dash of vanilla extract

  • 1/4 tsp pumpkin pie spice or cinnamon

  • 2 teaspoons maple syrup

  • 2 tablespoons chia seed

  • maple roasted pepitas (optional topping)

  • toasted coconut (optional topping)

  • chocolate chips (optional topping)

Directions:

  1. In a mason jar or other container of choice, whisk together the milk, pumpkin puree, vanilla extract, pumpkin pie spice, and maple syrup.

  2. Add the chia seeds and stir until combined.

  3. Place in the fridge for 1 hour and then stir again.

  4. Return to the fridge and let sit for at least 2 more hours (or overnight) before eating.

  5. Top with your favorite toppings and enjoy!
