Ingredients:
1/2 cup milk of choice ( I use this)
2 tbsp pumpkin puree
dash of vanilla extract
1/4 tsp pumpkin pie spice or cinnamon
2 teaspoons maple syrup
2 tablespoons chia seed
maple roasted pepitas (optional topping)
toasted coconut (optional topping)
chocolate chips (optional topping)
Directions:
In a mason jar or other container of choice, whisk together the milk, pumpkin puree, vanilla extract, pumpkin pie spice, and maple syrup.
Add the chia seeds and stir until combined.
Place in the fridge for 1 hour and then stir again.
Return to the fridge and let sit for at least 2 more hours (or overnight) before eating.
Top with your favorite toppings and enjoy!
