Game Day No Bean Chili

Cold weather, football, and friends all day it’s time for a big old pot of chili! If you are paleo or don’t eat legumes it might be something that you miss terribly. But fear not because this paleo version whips up just as easy and is delicious!

Ingredients:

  • 1 green bell pepper, chopped

  • 1 medium white onion, chopped

  • 1/2 medium red onion, chopped

  • 1 clove of garlic minced

  • 2 lbs ground pork or beef or any combination of ground meat

  • salt, pepper to taste

  • 1 small container white mushrooms, quartered

  • 2 cans diced tomatoes

  • 1 packet of red fork game day chili seasoning


Directions:

  1. In a large stockpot, on medium heat, sauté the bell pepper, onions, and garlic for 2-3 minutes.

  2. Add the ground meat, season with salt and pepper, and cook until browned.

  3. Add the mushrooms and cook for about 3-5 minutes or until mushrooms are slightly softened.

  4. Add the diced tomatoes and the red fork sauce.

  5. Simmer on medium-low for about 15-20 minutes stirring occasionally.
