Banana pudding is one of those classic desserts that everyone seems to love. I mean what is there not to love with layers of vanilla wafers, banana slices, pudding mix and whipped cream?
It wasn't until recently that I came across an instant pudding that actually worked with non-dairy milk so I was pumped! (Thank you Whole Foods!) Finally, I could use those bananas in something other than banana bread and recreate a childhood favorite.
Bring this one to the next family gathering or cookout and everyone will surely be pleased!
Ingredients
1 box vanilla wafers
2 - 3.7 oz vanilla instant pudding mix
2 - 9 oz. containers So Delicious CocoWhip (defrosted)
1 - 8 oz Kite Hill plain cream cheese (softened)
1/2 can sweetened condensed coconut milk
1 tbsp vanilla extract
5-6 large ripe bananas, sliced
Directions
Prepare the instant pudding at least one hour ahead of time.
In the bowl of a stand mixer fitted with the whisk attachment add the cream cheese. Whisk until smooth.
Add in the prepared pudding. Whisk until combined.
Add in the condensed milk and vanilla extract. Mix well
Fold in 1 container of the CocoWhip.
In a large punch bowl or another large bowl, line the bottom with vanilla wafers.
Add a layer of banana slices, pudding mix, and then vanilla wafer. Continue layering until everything is used, but save a few vanilla wafers for the top.
Top everything off with the second container of CocoWhip and decorate with remaining wafers and banana slices.
