Recently, while I was home in Ohio, my mom made this delicious recipe. I couldn't wait to get back to New Orleans and turn it paleo and I couldn't be happier with the results. Quick, simple, delicious summer dessert. Don't feel like blueberries? Try it with peaches, apples, or any other fruit that you would put in a pie!
Ingredients
1 qt blueberries
1 tbsp lemon juice
1 tsp arrowroot powder
1/4 tsp cinnamon
1 cup coconut flour
1 cup coconut sugar
1/2 cup butter, softened
Directions
Preheat oven to 375
Butter a casserole dish & add the blueberries
Sprinkle the berries with lemon juice, cinnamon, and arrowroot
In a separate bowl combine butter, coconut sugar and coconut flour to make a crumble
Sprinkle the flour mixture over the berries (No need to go overboard)
Bake for 45 min or until berries are nice and bubbly and the crumble is browned.
