Apple Cinnamon Muffins

Something about fall and the hope of cooler weather always makes me want to whip up some delicious baked goods! In this recipe I have managed to cut out all extra sugar and create a delicious muffin that can be great for breakfast or as a paleo treat! makes approximately 10 muffins



Ingredients:

  • 2 overripe bananas

  • 2 large eggs

  • 2 tablespoons almond butter

  • 1 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1 teaspoon vanilla

  • 3/4 cup almond flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 2 green apples, diced very small

Directions

  1. Preheat oven to 350 degrees

  2. In a large bowl, mash the bananas

  3. Mix in eggs, almond butter, cinnamon, nutmeg, and vanilla with the bananas

  4. Stir in the almond flour, baking soda, baking powder with the banana mixture

  5. Add the diced apples to the bowl

  6. Place muffin liners in muffin tin

  7. Spray liners with coconut oil

  8. Fill liners 3/4 full with muffin batter

  9. Bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean
